Tender, juicy and cooked to perfection is your aim. Personally, I think that if you need to use a steak knife then the steak is too tough to eat and needs to be put in the bin but steak lovers who like theirs very well done will disagree although most chef's don't like serving steak too well done. The solution to this is to use non serrated knives that don't hack at the meat and give a clean cut every time and keep them sharp.

What is the best way to cook the perfect steak ?
The perfect steak depends on:
- Personal preference
- Type of steak you have
- Cut of the steak
- How much time you have available
- Marinated requires thinking ahead and planning your time

Some are family favorites and some are more modern favorites from BBQ steak to steak and kidney pudding.
Here's a few ideas today for grilling steak
Use top quality steak like the tender cuts above for these
- Pre-heat your oven or grill ( or fire up the BBQ!) until really, really hot.
- Brush the steaks with a small amount of your favorite oil - lemon or garlic infused olive oil is great or add some sprigs of herbs like thyme (or sage with pork steaks)
- Season with salt and pepper
- Place under the grill and cook 3 - 4 minutes each side ( this is a rough guide as it will depend on how thick your steak is and how you prefer it)
- Let the steak rest for several minutes before tucking into it - it will be juicer and tastier
- Brush with oil and put a thin layer of seed mustard over and proceed as above
- Grill and before resting add a couple of walnut sized pieces of blue cheese to melt over
- Add a knob of butter to the finished steak - add more freshly ground pepper before resting
- Rub steak with raw sliced garlic before brushing with oil
- Try Jamie Oliver's trick of making a small herb "broom" to brush steak with - this works great for BBQ steak
- Marinate your steak before grilling - use olive oil, garlic, lemon, or even plain Worcestershire sauce. This will tenderize it as well as giving it a great taste. Remember to drain off the marinade before grilling and use lots of pepper to bring out the flavor .
